    I've never even heard of anything remotely like it, the description doesn't make it any more appealing. But hey, I'll try almost anything once!

    Seriously, it's yummy [img]smile.gif[/img] Rang mum earlier and she's making it for chrissy day woohooo. Oh and it's called a salad, but it's a dessert

    When you think about it, despite the rather weird combination of ingredients, it does kinda make sense.....the silky smoothness and tang of the sour cream, the sweetness and light, spongy texture of the marshmallows, the juicy burst of a mandarin segment with it's fruitiness and touch of acidity and the slightly crunchy texture and oilyness of the coconut.

    Anyway, the dip recipe.....

    HERBED BANANA AND COCONUT DIP

    300ml thick sour cream or Greek yoghurt
    1 small banana, finely chopped
    1 tablespoon desiccated coconut
    1 tablespoon lemon juice
    2 tablespoons chopped coriander.

    Combine all ingredients and mix well. Cover and stand 30 minutes before serving with pappadums. Makes 1.5 cups.
