yum tambo. I love a roast.

I used to do a roast lamb years ago where you put the lamb straight onto the oven rack. On the shelves underneath you have one flat dish with thin slices of eggplant, a layer of basil and a layer of tomatoes. In another dish you have thin slices of potato and thyme and veggie stock.

All the fat and garlic from the lamb drips through into the dishes below while it cooks...

I haven't made that for years. I'm thinkin it's time to line the oven floor with foil and try it again.

he has 4 nights of cooking to make up for ;) oo oo oo, I made a great recipe out of this months delicious for leftover barbeque chook.

soft round Tortilla

brush with excellent barbeque sauce
chopped up barbie chook
cheddar grated
chopped jalapenos
chopped coriander.

Fold over and panfry (I did mine in a flat sandwich toaster.

made for a hearty afternoon tea for my little munchkins last week. One for the regular list (outside of ski season perhaps, when waistline and heart function matter less...)

mmm sounds good legs, I tend to go very easy on corriander, mum used to grow it and flat leaf parsley and with her aging eyes would mistake one for the other, so i've over indulged in some very unusual combinations with coriander! graemlins/big_laugh.gif

Tea was nothing spectacular - pizza: dough from scratch, med salsa, chicken, brie, asparagus, avocado.

Absolutely delish (as per usual).

Dang, we forgot the pineapple.

I made this chicken dish i was shown when i was in the US

Beaten eggs, Parmesan, fresh basil (like HEAPS), garlic. coat the chicken in it and lightly fry it - sounds strange but it is really nice and the kids loved it...

Japanese at Ainoya in Kirribilli tonight.

Really good, especially the gyu tataki (which is one of my favourite dishes). Excellent 300g wagyu.

Dinner for 6, including wine came to a whopping $35 a head!!!

mind you, I was full-ish, but not overly stuffed, so after the play ("Let The Sun Shine" - Ensemble Theatre...very enjoyable) I came home and munched down a slab of the apple apice cake I made the kids for afternoon tea...yummmmmmy.
